Ingredients
- 1 box of gluten-free crackers (suggested: Glutino)
- 1 cup of unsalted butter
- 1 cup of brown sugar
- 1 bag of semi-sweet chocolate chips
- Crushed peppermints (optional)
Directions
Preheat Oven: Set the oven to 400°F.
Prepare Baking Sheet: Line a 15 x 10-inch rimmed baking sheet with aluminum foil. Arrange crackers side by side on the sheet until it's fully covered.
Melt Butter and Sugar: In a saucepan over medium-high heat, melt the butter and brown sugar. Bring to a boil and let it boil for 3 minutes. Pour evenly over the crackers. Spread quickly before it hardens.
Bake: Place in the oven and bake for 7 minutes.
Add Chocolate: Spread chocolate chips evenly over the crackers. Allow them to melt and then bake for an additional 3 minutes.
Add Peppermint: Remove from the oven and sprinkle crushed peppermints over the top. Let it cool in the refrigerator for at least 1 hour.
Break into Pieces: Once cooled, break the toffee into small, bite-sized pieces.
Enjoy: Your Peppermint Toffee is ready to be enjoyed!
