Paneer Tikka Masala Fried Rice
Tender paneer, crisp veggies, and fragrant spices meet fluffy rice in this easy, flavorful dish. Using fresh or frozen veggies of your choice and your favorite Droosh spice (we love the tikka masala in this recipe) this is the perfect dish to make a big batch of to have on hand all week long!

Ingredients
1 package paneer, cubed
- 1 tsp minced ginger
- 1tsp minced garlic
- 2 tsp olive oil

2 tbsp Tikka Masala Spice
- 2 tbsp olive oil
- 2-4 cloves garlic chopped
- ½ onion chopped
- 1 cup spring onion chopped
- 1-2 cups of your fav frozen veggies (carrots, peas, bell peppers, etc)
1 tsp sriracha or chili oil of choice
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 2 cups cooked rice
- 2tbsp everyday mix
- 1/2 cup cilantro
salt and pepper, to taste

For Fried Rice
Directions
Cube paneer and add to a bowl with the ginger, garlic, olive oil, Everyday Spice, and salt and pepper, to taste
Mix well making sure all the spices are well combined and marinate for at least 15 minutes
Heat a large pan with oil and add paneer and roast on low to medium heat until it turns golden brown, add a splash of water if it's looking dry; transfer to plate and set aside
Heat more oil if needed and saute the garlic, onion and spring onion on medium-high heat
Add veggies of choice and stir fry on high heat until the veggies are cooked
Add the chili sauce, vinegar, soy sauce, everyday spice, S&P to taste and mix
Add in the cooked rice (use whatever rice you prefer) and stir fry on high flame combining everything
Add in roasted paneer, mix, and garnish with cilantro and more spring onion

Serena's Tips:
- You can sub paneer for any protein of choice
- Use any of the Droosh blends depending on your flavor desire
- Add any veggies or garnishes you like as this is a super versatile dish!
