He’s traveled all over Italy with Chef Sarah, and has the distinct honor of being one of only 12 people in the world who taste Parmigiano-Reggiano to assure its quality for the Italian government. Made from the same cooked grape that must be used to make traditional balsamic but aged 2-3 years for a lighter, brighter and sweeter version.
