This vinegar is brought to us by Monteverde in collaboration with Acetaia San Giacomo. Acetaia San Giacomo is owned by their great friend Andrea Bezzecchi. He’s traveled all over Italy with Chef Sarah, and has the distinct honor of being one of only 12 people in the world who taste Parmigiano-Reggiano to assure its quality for the Italian government. Made from the same cooked grape that must be used to make traditional balsamic but aged 2-3 years for a lighter, brighter and sweeter version.
