The recipe below uses their best-selling Golden Milk Granola, but their Cinnamon Toast and OG-flavored granola work just as well—go with your favorite!

Stellar Granola Icebox Cake

This yummy Stellar Granola Icebox Cake is a simple and healthy take on the classic icebox cake! Enjoy the delicious taste of fresh berries, coco whip, and Stellar Granola for a rave-worthy treat friends and family will love.
2 containers of vegan coco whip (or make your own!)
1 box of your favorite gluten free cookies (graham crackers, gingersnaps, snickerdoodles, etc)
1 cup Stellar Granola Golden Milk Granola
1 cup strawberries
1 cup blueberries
Prep your loaf pan with plastic wrap, leaving a hangover to help you remove it when it is done!
Layer the cookies on the bottom of the loaf pan—we used ginger snaps.
Spoon coco whip on top and spread an even layer.
Sprinkle a layer of blueberries.
Add another layer of coco whip, spreading evenly.
Layer on your Stellar Granola Golden Milk granola crumbles.
Add another layer of coco whip, strawberries and Stellar Granola!
Freeze until set, 4 hours or overnight.
To serve, pull the hangover plastic wrap to release the icebox cake from the loaf pan.
Cut into slices and plate! Jazz it up and serve with blueberry compote.
