These are the kind of potatoes that disappear fast. Crisp edges, soft centers, and just enough depth from the Potato Allrounder to make them feel a little more intentional than your usual side.

Ingredients
-
2 Tbs Potato Allrounder
- 2 Oz. Grated Parmesan Cheese
- 1⁄2 Cup Olive Oil, Divided
- 2 Lb. Baby Potatoes, Cut In Half
-
Salt To Taste
Directions
Preheat Oven to 400°F.
- Combine the Parmesan cheese and the Potato Allrounder in a small bowl.
- Pour 1⁄4 cup of the olive oil into a 13x9-inch baking dish. Tilt the dish to evenly coat the bottom of the dish with the oil.
- Sprinkle the cheese mixture evenly onto the bottom of the oiled dish. Do not stir.
- Place the potatoes, cut sides down, over the cheese in the baking dish. Firmly press the potatoes into the oil mixture.
- Drizzle the remaining 1⁄4 cup olive oil over the potatoes, then sprinkle the potatoes with the salt.
- Bake the potatoes for 35 to 40 minutes or until the potatoes are tender and the Parmesan cheese is dark golden brown.
- Remove the baking dish from the oven. Let the potatoes stand in the dish for 5 minutes before carefully separating the potatoes with a spatula or fork, then turning the potatoes over before transferring them, cut sides up, to a serving platter.
- Serve with your favorite dip, such as sour cream.
