Ingredients
1 Tbs Butter

2 Tbs Flour
- 1 Cup Milk
- 2 Tbs Grainy Brown Mustard

1⁄2 tsp Salt

Cracked Black Pepper

4 tsp Egg Topping
- 8 Slices Brioche Bread
- 1⁄2 lb. Comté or Gruyère Cheese
- 8 - 12 Slices Black Forest Ham, Depending On Thickness

Directions
Preheat the oven to 450°F.
Melt the butter in a small saucepan over medium heat, then whisk in the flour until well blended. Gradually stir in the milk, then bring to a boil, stirring constantly with the whisk. Add the mustard, then season the sauce with the salt and pepper; simmer over medium-low heat for 5 minutes, stirring frequently. Remove the saucepan from the heat; set aside.
Toast the brioche slices until golden brown. Cut 4 slices from the cheese block, then shred the remaining cheese.
- Spread 4 of the bread slices with the mustard sauce, then top each with 1 cheese slice and 2 - 3 ham slices. Cover with the remaining bread slices to make 4 sandwiches.
- Place the sandwiches in a single layer on a baking sheet; sprinkle with the shredded cheese.
- Bake for 5 minutes or until the cheese is melted.
- Remove the sandwiches from the oven. Top with the Egg Topping.
