Pickled Prince was created by Chef Brian Greene in 2020. After being furloughed from the first Covid-19 indoor dining ban in Chicago, Chef Brian’s idle hands felt the urge to continue to cook & create. As a life long mid-westerner chef, Greene has always loved to harvest and preserve the last of the seasons peak flavored fruits and vegetables in many forms such as but not limited to: giardinieras, salsas, pickles, hot sauces & jams! Pickled Prince makes everything in small batches from our home base in Chicago to achieve optimal flavor. When seasonally available, all of our produce is sourced from a series of farms; Down at the Farms, LLC - a farmer to farmer marketing and delivery service based outside of Fairbury, Illinois. We also like to source from Los Rodriguez farms in Eau Claire Michigan, Mick Klug Farms, and so many more great local farms and vendors.
