Rigatoni Pasta With Saffron Mushroom Sauce

If you like noodles and mushrooms as much as we do then this rigatoni pasta recipe is just what you need. Rigatoni pasta is one of our favorite noodle dishes to make. This tube shaped pasta noodle is bigger than ziti and penne. It can be kind of slanted too but not as curved as elbow macaroni. We like it because the sauces get scooped up in the center of the noodle! It tastes great with any kind of tomato, cream, cheese, pesto, or butter sauce.

So what exactly is saffron? It’s a spice that comes from the saffron crocus flower. The saffron crocus flower has vivid crimson threads that are collected and dried to use as a spice. How do you make this rigatoni pasta with mushrooms? Start by bringing 6 cups of water to a boil in a large pot. Add in a splash of olive oil and salt along with the rigatoni noodles. Cook them for 10 to 15 minutes depending on if you like al dente or not. Drain the noodles from the water and set them aside before making the mushroom sauce.

In order to make the mushroom sauce recipe with saffron, first heat the oil and butter in a skillet. Sauté the shallots, garlic, and mushrooms until they start to wilt. Next you want to reduce the wine in the skillet before adding the chicken broth and reducing it down to half as well. Lastly stir in the saffron, lemon juice, Parmesan, salt and pepper and simmer a few more minutes before adding the cooked rigatoni in and removing the heat.
