2-3 tbsp vegetable oil
2 tbsp minced garlic
- 2 medium-large carrots, chopped
1 lb rice noodles
2 tbsp soy sauce

2 tbsp Nam Prik Pao
4 fried eggs
1 tbsp sesame oil
Directions
Bring a large pot of water to a boil and cook the rice noodles until just al dente. Drain, rinse with cold water to stop the cooking process, and toss with 1 teaspoon of sesame oil to prevent sticking. Set aside.
- In a large wok or nonstick skillet, heat the vegetable oil over high heat. Add the minced garlic and cook, stirring frequently, until fragrant and golden brown—about 1 minute.
Toss in the chopped onions and sauté until they begin to soften and turn golden. Add the carrots, cooking for another 3–4 minutes, or until the vegetables are just tender and slightly caramelized.
Add the prepared noodles to the pan and stir-fry for 1–2 minutes. Stir in the soy sauce and Nam Prik Pao (Thai chili jam), starting with 1 tablespoon of each and adjusting to taste. Toss well to coat everything in the flavorful sauce.
Remove the noodles from the skillet and divide into serving bowls. In the same pan, add a bit more oil and quickly fry the eggs until the edges are crispy.
- Top each bowl of noodles with a fried egg and an optional extra spoonful of Nam Prik Pao for even more heat and richness. Enjoy immediately!
