Avocado Halloumi Sandwich

Ingredients

1⁄2 tsp Avocado Topping
1 fully ripe avocado, mashed
½ lime, juiced

1 Tbsp olive oil
5 oz halloumi cheese, cut into ½-inch-thick slices
2 slices of whole wheat bread, toasted
Directions
Mix avocado and lime juice until well blended.
Heat the oil in a medium skillet over medium heat. Add the cheese slices, then cook 2-3 min. on each side or until both sides of cheese slices are crisp and golden brown.
Spread the toasted slices with the mashed avocado and
top with the cheese.
Sprinkle Avocado Topping on both sandwiches.
Recipe Note
Add sliced tomatoes and arugula for extra texture and/or garnish with fresh parsley or cilantro.
