Here is an easy Payasam, or “rice pudding” recipe to enjoy as a dessert while celebrating Diwali. All you need are some rice, milk, sugar and 15 minutes. Also add in nuts and ghee for that extra flavor!

Ingredients
- 1/2 cup basmati rice
- 4 cups milk
- 1/2 cup sugar
- A handful of mixed nuts (like cashews and almonds), chopped
- 2 tablespoons ghee (clarified butter)
Directions
- Rinse the rice until water runs clear, then drain.
- In a pot, bring the milk to a gentle boil. Add the rice, and reduce heat to a simmer.
- Cook, stirring occasionally, until the rice is soft and the milk thickens (about 15 minutes).
- Stir in sugar until completely dissolved.
- In a small pan, heat ghee over medium heat. Add the nuts and sauté until golden.
- Mix the nuts into the Payasam for a rich, nutty flavor.
- Serve the Payasam warm or chilled as a delightful Diwali dessert!
